Soups and Broths

Sulu köfte is a Turkish stew or thick soup, a çorba, built around köfte, or meatballs. The meatballs are usually made from minced beef mixed with rice or bulgur, onion and spices, and they are boiled in their own gravy together with tomato sauce, olive oil and Turkish red pepper paste. A similar dish called ekşili köfte or terbiyeli köfte is finished with an egg and lemon sauce known as terbiye. Related meatball dishes listed with it include Harput meatballs, Smyrna meatballs, Tabriz meatballs and yuvarlak.
