Soups and Broths

Mastava, also called māstāba, is a traditional Uzbek and Tajik soup sometimes described as a liquid pilaf. It is prepared using the frying method typical of Central Asian cuisine, similar to some types of shurpa but distinguished by its use of rice; meat, usually lamb ribs, is seared in a qozon cauldron with carrots, onions and often tomatoes before rice, potatoes and water are added, seasoned with cumin, tarragon and other spices, with the fermented milk product katyk added before serving.
