Macaroni soup is a noodle soup built around macaroni pasta, documented in culinary writing since at least the nineteenth century and described as one of the most common dishes served in Italian inns in the early 1800s. Traditional versions may include Parmesan cheese, while regional variants add vegetables, meat, most often chicken, and evaporated milk. Because it is cheap and nutritious it has long been served in institutions such as schools, hospitals and prisons, often with added soybeans or chicken for protein, and it takes distinct local forms including the Filipino sopas, versions served with chicken balls in Indonesia and Malaysia, and a place on the menu of Hong Kong cha chaan teng cafes and McDonald's breakfast offerings there.
