Edikang ikong is a vegetable soup made with ikong ubong that originated among the Efik people of Cross River State and the Ibibio people of Akwa Ibom State in Nigeria. It is considered a delicacy and is sometimes served on occasions of importance, and because it is nutritious and costly to prepare it has been described as eaten mostly by wealthier Nigerians. Ingredients include beef, dried fish, bush meat, crayfish, shaki, kanda, pumpkin leaves, water leaves, ikong ubong, onion, periwinkle, palm oil, salt, and pepper.
