Palm Nut Soup

Palm nut soup, also called banga, is a soup made from palm fruit that is common across West and Central Africa, including Cameroon, Sierra Leone, Ghana, Nigeria, the Democratic Republic of Congo and Ivory Coast, with different ethnic groups keeping their own local names and variations. It is made by harvesting, washing, boiling and mashing palm fruits to extract palm cream, which is then combined with stewed marinated meat or smoked dried fish, crayfish, chili peppers, onions and spice leaves, with some versions adding okra for texture. It is typically eaten with a starch such as eba, fufu, omotuo, banku or fonio, used by hand to scoop up the soup.
