Balado is a hot and spicy chili preparation from Minang cuisine in West Sumatra, Indonesia, made by stir-frying ground red chili peppers with garlic, shallots, tomato and kaffir lime in coconut or palm oil; unlike a sambal condiment served on the side, balado is stir-fried together with its main ingredient, such as prawns, squid, eggs, chicken, beef, eggplant or potatoes, to form a complete dish rather than merely a sauce. It takes its name from the Minang word for chili pepper, lado, and dishes made this way follow the naming pattern of ingredient plus balado. The preparation has spread from West Sumatra throughout Indonesia and to Malaysia, particularly Negeri Sembilan.
