Scallion

Scallions, also called green onions or spring onions, are a young form of onion harvested before the bulb has fully swollen, consisting of a small white base and long, hollow green leaves, both of which are edible. They have a milder, fresher, less pungent flavor than mature onions, and are used both raw as a garnish, sliced thinly over soups, noodles and salads, and cooked into stir-fries, sauces and batters across many cuisines, particularly in East and Southeast Asian cooking. Scallions can be grown from true onion varieties or from related species bred specifically to be harvested young without forming a large bulb.
