Baingan Bharta

Stews, Braises and Sauced Dishes

Baingan bharta, also spelled baigan bharta or begun bharta, is a dish from the Indian subcontinent made by mashing or mincing grilled eggplant with tomato, onion, herbs and spices. The eggplant is traditionally cooked over charcoal, in a tandoor, on a barbecue grill or in an oven, or by holding it directly over a flame, which gives the dish a smoky flavor before the blackened skin is peeled away. It is eaten across Indian, Pakistani and Bangladeshi cuisine, usually by hand with flatbread, and can also accompany rice.
