Palm oil, peanuts, okra and chili pepper run through much of the region's cooking; the one-pot spiced rice dish jollof rice, claimed and argued over by Nigeria, Ghana, Senegal and other coastal states, is the region's best-known modern export. The Atlantic slave trade carried West African staples and techniques directly into the cooking of the Americas, most visibly in the Creole and Gullah kitchens of the southern United States and the Caribbean.FactsWest African CuisineConnectionsIn the Other AtlasesSourcesTake a Related QuizComments (0)Reader Challenges (0)FactsSignature TechniqueWell-attestedOne pot stewing as in jollof rice, deep frying, and grinding seeds into thickening pastes as in egusi soup are hallmark techniques. 1Origin RegionWell-attestedWest Africa, spanning the Guinean coast and the Sahel, including Nigeria, Ghana and Senegal among others. 2West African CuisineFilter Results13 entriesDish FamilyAllAfrican Salads (1)Latin American and Caribbean Breads and Pastries (1)Latin American and Caribbean Roasted, Grilled and Fried Dishes (1)Middle Eastern and North African Rice and Grain Dishes (1)Sub-Saharan African Grain Dishes (3)Sub-Saharan African Soups (3)Sub-Saharan African Stews, Braises and Sauced Dishes (3)Main IngredientAllBeef (1)Cassava (3)Chicken (1)Chili Pepper (1)Goat Meat (1)Lemon (1)Meat (1)Mustard (1)Onion (2)Palm Oil (1)Peanut (1)Rice (1)Sausage (1)Semolina (1)Tomato (1)Era (Origin Period)All1200 (1)1801 (1)TraditionAllFermentation (2)Spice Trade Traditions (1)Street Food Culture (1)Format/TypeAllAfrican Salads (1)Latin American and Caribbean Breads and Pastries (1)Latin American and Caribbean Roasted, Grilled and Fried Dishes (1)Middle Eastern and North African Rice and Grain Dishes (1)Sub-Saharan African Grain Dishes (3)Sub-Saharan African Soups (3)Sub-Saharan African Stews, Braises and Sauced Dishes (3)CourseAllAppetizer (1)Soup (3)Dietary SuitabilityAllContains Meat or Poultry (3)Origin RegionAllAfrica (3)Asia (1)Cabo Verde (1)Cote d'Ivoire (1)Cuba (1)Dominican Republic (1)East Asia (1)Ghana (2)Italy (1)Nigeria (4)Panama (1)Senegal (2)Sierra Leone (1)The Maghreb (1)United States (1)West Africa (3)Yorubaland (1)Show ResultsBrowseCompareSelect all 13Abacha (food)West African CuisineAttiekeWest African CuisineBerkoukesWest African CuisineCachupaWest African CuisineEgusi SoupWest African CuisineFufuWest African CuisineGroundnut SoupWest African CuisineJollof RiceWest African CuisineMeat pieWest African CuisineMoin MoinWest African CuisineNkwobiWest African CuisineTostonesWest African CuisineYassaWest African CuisineConnectionsAssociated WithPalm Wine, Drinks Well-attested ConnectedPalm wine holds ceremonial importance across West African cultures.Source Palm Wine (Wikipedia)tier 2Expresses TraditionSpice Trade Traditions, Food Traditions Well-attested Source The Oxford Companion to FoodAlan Davidsontier 1Features DishAbacha (food), Dishes Well-attested Source Abacha (food) (Wikipedia)Attieke, Dishes Well-attested Source Acheke (Attieke) (Wikipedia)tier 3Berkoukes, Dishes Well-attested Source Berkoukes (dish) (Wikipedia)Cachupa, Dishes Well-attested Source Cachupa (Wikipedia)Egusi Soup, Dishes Well-attested Source The Oxford Companion to FoodAlan Davidsontier 1Fufu, Dishes Well-attested Groundnut Soup, Dishes Well-attested Source Groundnut Soup (Wikipedia)tier 3Jollof Rice, Dishes Well-attested Source The Oxford Companion to FoodAlan Davidsontier 1Meat pie, Dishes Well-attested Source Meat pie (Wikipedia)Moin Moin, Dishes Well-attested Source Moin Moin (Wikipedia)tier 3Nkwobi, Dishes Well-attested Source Nkwobi (Wikipedia)Tostones, Dishes Well-attested Source Tostones (Wikipedia)tier 3Yassa, Dishes Well-attested Source Wikipedia: Yassa (food)Uses IngredientCassava, Ingredients Well-attested Source The Oxford Companion to FoodAlan Davidsontier 1Chili Pepper, Ingredients Well-attested Source Larousse Gastronomiquetier 1Ginger, Ingredients Well-attested Source Larousse Gastronomiquetier 1In the Other AtlasesOriginated InAfricaAlso in Geography Atlas: where this subject originated.Source The Oxford Companion to FoodAlan Davidsontier 1GhanaAlso in Geography Atlas: where this subject originated.Source The Oxford Companion to FoodAlan Davidsontier 1NigeriaAlso in Geography Atlas: where this subject originated.Source The Oxford Companion to FoodAlan Davidsontier 1SenegalAlso in Geography Atlas: where this subject originated.Source The Oxford Companion to FoodAlan Davidsontier 1The SahelAlso in Geography Atlas: where this subject originated.Source The Oxford Companion to FoodAlan Davidsontier 1West AfricaAlso in Geography Atlas: where this subject originated.Source The Oxford Companion to FoodAlan Davidsontier 1Sources1.
