Gajak is a dry, brittle confection from north central India made by cooking sesame seeds in jaggery syrup and setting the mixture in thin layers, sometimes with added peanuts. It is also known as tilsakri, tilpatti or tilpapdi, and a batch of five to eight kilograms can take ten to fifteen hours to prepare. It keeps for months and is made in several varieties, including versions with dried fruit, chocolate or pistachio.
