Jerusalem mixed grill, known in Hebrew as meorav Yerushalmi, is a grilled dish of mixed poultry offal, typically chicken hearts, spleens and liver along with chicken or turkey meat and onion, seasoned with garlic, black pepper, cumin, turmeric, olive oil and coriander. It originated at the Mahane Yehuda Market in Jerusalem, with several restaurants claiming to have invented it, and is considered by some the national dish of Israel. One Jerusalem steakhouse, Sima, has drawn international culinary attention for guarding a secret ingredient reported to be a type of Georgian pepper.
