Bougna

Stews, Braises and Sauced Dishes

Bougna is a traditional feast dish of the Kanak people of New Caledonia, also prepared in Vanuatu under the names bunya or bunia; the name derives from the Drehu word puhnya, meaning bundle or pack, referring to how the dish is assembled. It combines starchy vegetables such as taro, yam, sweet potato and banana with a protein such as chicken, fish, crab, prawns or lobster, all wrapped together in banana leaves. The wrapped bundle is buried and cooked for about two hours in a ground oven using red-hot rocks heated by fire, after which the banana leaves are unearthed, unwrapped and the contents eaten.
