Flemish stew, known in Dutch as stoofvlees or stoverij and in French as carbonade flamande, is a beef or pork stew popular in Belgium, the Netherlands and French Flanders. It is cooked with beer and mustard, sometimes thickened with bread, and seasoned with bay leaf, thyme, clove and juniper berries; in East and West Flanders dried prunes are often added. Recipes vary by region and household, with some cooks using gingerbread or speculaas as a thickener and regional beers or Sirop de Liege for flavor, and the dish is usually served with French fries, boiled potatoes, apple sauce or stoemp.
