The Cornish pasty is a British baked turnover particularly associated with Cornwall and Devon, consisting of a filling baked inside a folded and crimped shortcrust pastry circle. The traditional version, filled with beef, sliced or diced potato, swede, and onion, seasoned with salt and pepper, has held Protected Geographical Indication status in Europe since 2011, is the food most associated with Cornwall, and accounts for six percent of the Cornish food economy; it spread worldwide with Cornish miners and sailors, with variations found in Australia, Mexico, the United States, and Ulster.

What makes a pasty a Cornish pasty rather than just a pasty?
A Cornish pasty is a protected name: a D-shaped crimped pasty with a beef and vegetable filling made in Cornwall.
Cornish pasty is a protected name. The Cornish Pasty Association states that the pasty is registered with Protected Geographical Indication status. Under the rules it describes, the filling may contain no meat other than beef and only the listed vegetables, with at least 12.5 percent beef and 25 percent vegetables in the whole pasty. The pasty must be crimped into a D shape with the crimp towards one side, and any product sold under the name must be produced west of the Tamar, in Cornwall.
