Pea Soup

Soups and Broths

Pea soup, or split pea soup, is a dish made typically from dried peas such as the split pea, all of which are cultivars of Pisum sativum, and it appears across the cuisines of many cultures with a wide range of variations. Depending on the regional variety of pea used, the soup is most often greyish-green or yellow in color, and it has been eaten since antiquity: it is mentioned in Aristophanes' The Birds, and vendors in ancient Athens sold hot pea soup as early as 500 to 400 BCE.
