Pani puri is a snack from the Indian subcontinent in the chaat category of street foods, consisting of a small, deep fried, hollow puri shell made from semolina or wheat flour that is filled and dipped in flavored water. The shell is typically filled with mashed potatoes, chickpeas, onions and spices, then dipped in a spicy green pani made with mint or coriander or a sweet red pani made from tamarind, and eaten in a single bite. Its precise origin is unclear since potatoes only reached India after the Columbian Exchange, making the modern version a relatively recent dish, though the crisp puri shell itself is sometimes traced to Varanasi.
