Watermelon steak

Roasted, Grilled and Fried Dishes

Watermelon steak refers to cooked slices of watermelon, prepared by grilling, pan frying, baking, or roasting for anywhere from a few minutes to more than two hours depending on the method. Some cookbooks present it as a meat substitute for vegetarians, although the fruit lacks the protein and other nutrients found in actual steak. Thorough cooking evaporates much of the fruit water content, concentrating its flavor and firming its texture; grilled watermelon has been compared to seared raw tuna, and a baked version has been described as having a texture resembling raw fish, with browning that gives it a meat-like appearance even though its flavor stays fruity rather than savory.
