Chia seed oil is an oil pressed from the seeds of Salvia hispanica, the chia plant native to Mexico and Guatemala, notable for having one of the highest known concentrations of alpha-linolenic acid, a plant-based omega-3 fatty acid, among common food oils. Because of its high polyunsaturated fat content it has a short shelf life and low smoke point, and is generally used unheated, in dressings, drizzled over food, or taken as a dietary supplement, rather than for cooking. It is produced in smaller volumes than whole chia seeds, which remain the more common commercial chia product.
