Ginkgo nuts are the seeds of the ginkgo tree, Ginkgo biloba, and are popular in Asian cuisine despite carrying real health risks. The species' own Wikipedia lead names potential carcinogenicity, allergic reactions, ginkgotoxin poisoning, drug interactions and adverse effects such as bleeding and neurological symptoms, especially when the seeds are eaten in excess or improperly prepared; the lead offers no further culinary detail beyond this, so this description says no more than that.
