Hemp Seed

Hemp seed is the edible seed of Cannabis sativa, eaten raw, ground into meal, sprouted, or processed into beverages such as hemp milk, and also cold-pressed into hemp oil, which is high in unsaturated fatty acids but must be refrigerated to avoid turning rancid. Per 100 grams, hulled hemp seeds provide 586 calories, 32 percent protein and 49 percent fat, along with high levels of thiamine, magnesium, manganese and phosphorus, their protein made up chiefly of edestin, albumin and beta-conglycinin. Food use is regulated: in the United Kingdom, hemp seed for food must come from licensed plants with less than 0.3 percent THC, and in the United States it is permitted in food and has traditionally been sold through health food stores and by mail order; France is Europe's largest hemp producer as of 2022.
