Hemp seed oil is a culinary oil cold-pressed from the seeds of Cannabis sativa, distinct from cannabis oils intended for other uses since food-grade hemp seed oil contains negligible levels of psychoactive compounds. The oil has a characteristic green tint and a nutty, slightly grassy flavor, and carries an unusually balanced ratio of polyunsaturated omega-6 to omega-3 fatty acids. It is used almost exclusively as a finishing oil for salads and dips rather than for cooking, since heat degrades its delicate fats and lowers its smoke point well below that of most other vegetable oils.
