Sablefish, Anoplopoma fimbria, is a deep-sea fish that lives on muddy seafloors of the North Pacific Ocean at great depths, and is also widely known as black cod, though it is not a true cod. Its white flesh is notably soft-textured, mildly flavored and high in fat, giving it a rich, buttery quality when cooked, with a texture often compared to that of Patagonian toothfish. Sablefish is especially prized in Japanese cuisine, where it is called gindara and traditionally marinated in miso or sake lees before broiling, a preparation popularized internationally as black cod with miso.
