Shallot

Vegetables and Vegetable Products

Shallots are a form of onion, Allium cepa var. aggregatum, distinguished from common onions by their smaller size, coppery skin and a milder, sweeter flavor with a hint of garlic. They grow in clusters of cloves similar to garlic rather than as a single bulb, and are widely used in French cooking, forming the base of classic sauces such as beurre blanc and vinaigrettes, as well as across Southeast Asian cuisines, where fried shallots are a common garnish. Shallots can be used raw in dressings and salsas or cooked into sauces and braises, prized for caramelizing more quickly and evenly than larger onions.
