Bánh tráng nướng, also called bánh đa nướng, is a Vietnamese food made from bánh tráng, the rice crackers or rice paper consumed in Vietnam. Traditionally the sesame-seeded version is a large, round, thick cracker that shatters easily; it can be eaten alone but is most often broken into vermicelli noodle dishes such as cao lầu and mì Quảng. In recent years a street-food form has become popular in which rice paper is grilled with many toppings, commonly egg, ground pork, dried shrimp or fermented shrimp paste, fried shallots, pork floss, scallion oil, hot chili sauce and mayonnaise. The English Wikipedia article says it is particularly popular in Đà Lạt and Ho Chi Minh City and has spread to Hanoi, where it is sold near schools and night markets. It gives no date of origin.
