Hawawshi

Breads, Flatbreads and Savory Pastries

Hawawshi is a traditional Egyptian dish consisting of pita bread stuffed with minced meat seasoned with onions, pepper, parsley and sometimes chilies. Its two major variants are the standard baladi version, made by filling flat Egyptian bread with the meat mixture and baking it, and the Alexandrian version, in which the filling is sandwiched between two circular layers of dough with different spices before baking. The dish has spread with local variations to other parts of the Middle East and North Africa: in the Levant it is made with saj bread and hot peppers, and in Algeria, where it is called muhajib, it is eaten with soup or a yoghurt salad.
