Jian dui, or sesame balls, is a fried Chinese pastry made from glutinous rice flour and coated with sesame seeds on the outside, crisp and chewy after cooking. The dough expands during frying to leave a large hollow inside the pastry, which is filled with lotus paste, sweet black bean paste, or red bean paste. Depending on the region, the pastry is also known as matuan in North and Northwest China, mayuan in Northeast China, and zhendai in Hainan.
