Isterband

Roasted, Grilled and Fried Dishes

Isterband is a coarsely ground, lightly smoked sausage from Sweden, its name translating roughly as lard skins. It is made from pork combined with barley groats and potato, and is traditionally lacto-fermented, historically by hanging the sausages over a stove, though modern factories add lactic acid bacteria to speed the process; the result has a characteristically sour taste. It is typically served with creamed dill potatoes and pickled beetroot, and regional versions include the Smaland variety known as smalandska isterband, a more strongly sour syrliga isterband, and a lower-calorie lattisterband.
