Kapsalon

Roasted, Grilled and Fried Dishes

Kapsalon is a Dutch fast food dish invented in 2003 in the Delfshaven district of Rotterdam. It layers french fries in a disposable metal tray, tops them with doner meat, covers the meat with sliced Gouda cheese, and heats the tray in an oven until the cheese melts; shredded iceberg lettuce dressed with garlic sauce and sambal is added afterward. The dish was created for Nataniel Gomes, a Cape Verdean hairdresser, who asked a neighboring shawarma restaurant, El Aviva, to combine his favorite ingredients into one order. Its name is the Dutch word for hairdressing salon, referencing Gomes's own shop. The dish quickly spread across the Netherlands and internationally as an example of Rotterdam's multicultural food culture.
