A malakoff is a ball of fried cheese associated with western Switzerland, especially the villages of Eysins, Begnins, Bursins, Luins and Vinzel along the shores of Lake Geneva. Its name recalls the Battle of Malakoff during the siege of Sevastopol, and the dish is said to have been invented by Swiss mercenaries who fought there.
