Schwenker

Roasted, Grilled and Fried Dishes

Schwenker is a grilled pork dish from the Saarland region of Germany, made from a marinated pork neck steak, roughly hand sized and one to three centimeters thick, seasoned with either a green herb or a red paprika marinade; turkey versions have become popular more recently. The steaks are traditionally cooked on a swinging grill, also called a schwenker, fired with beechwood, which enthusiasts consider essential to the dish flavor. Local legend traces the grilling style to German immigrants who brought it back from the Rio Grande do Sul region of Brazil, and it became widespread in Saarland partly because steelworkers could build the swinging grills themselves from scrap metal.
