Tunde ke kabab

Roasted, Grilled and Fried Dishes

Tunde ke kabab, also known as galouti kebab, is a minced meat dish strongly associated with Lucknow, India, and part of Awadhi cuisine, traditionally made from finely minced buffalo meat combined with yogurt, garam masala, ginger, garlic, cardamom, cloves, ghee, dried mint, onion, vinegar, saffron, rose water, sugar and lime, with mutton or chicken versions also prepared. According to legend it was created in the 17th century by a one-armed cook named Murad for a competition to find the best kebab in Awadh, using around 100 spices to produce an especially tender result that won the contest; its more common name, tunday ke kebab, refers to the one-armed cook who invented it, and the alternate name galouti comes from a Hindi-Urdu word meaning something that melts.
