Ayam goreng, meaning fried chicken in Indonesian and Malay, is an Indonesian and Malay dish of chicken deep fried in palm or coconut oil, typically seasoned with turmeric, garlic, shallots and other spices rather than coated in the flour breading common to other countries' fried chicken. In 2024 the food guide TasteAtlas ranked ayam goreng among the world's best fried chicken dishes and top traditional chicken preparations.
