Boerewors is a sausage that originated in South Africa, its name combining the Afrikaans words for farmer and sausage, and it is a staple across Southern Africa including South Africa, Botswana, Zimbabwe and Namibia. Under South African regulation it must contain at least 90 percent meat or fat from beef, pork, lamb or goat, no more than 30 percent fat, and no offal apart from the casing, and is made from coarsely minced meat combined with spices such as toasted coriander seed, black pepper, nutmeg, cloves and allspice, packed into a casing in a traditional continuous spiral. It is most often braaied, grilled over charcoal or wood, and commonly served with pap or as a boerie roll in a hot dog bun with tomato, chili and onion relish.
