Dame Blanche

Dame blanche, French for white lady, is a dessert of vanilla ice cream topped with whipped cream and warm, molten chocolate sauce, comparable in concept to an American sundae. It was created by the chef Auguste Escoffier and is associated with Belgium and Germany; in Belgium and the Netherlands it keeps the name Dame blanche, while in Germany and Switzerland it is called Coupe Danemark. Escoffier's original version differed considerably from today's, made with almond milk ice cream, poached peach, lemon sorbet and white currants. The dessert is served cold.
