Dragon's Breath

Salads, Dips, Sandwiches and Fermented Cold Dishes

Dragon's Breath is a frozen dessert of colorful cereal balls, similar in flavor to Froot Loops, dipped in liquid nitrogen and served in a cup, producing visible vapor as the extreme cold meets the warmth of the mouth. It was originally invented and served by chef Jose Andres at his minibar restaurant in 2008, and after he discontinued it at his Los Angeles restaurant in 2009, the dessert spread to Taiwan, South Korea and the Philippines before becoming popular in the United States through the Los Angeles-based chain Chocolate Chair. The United States Food and Drug Administration issued a public alert in 2018 warning that the dessert can cause severe skin and internal organ damage, burns, breathing difficulty and life-threatening injury, including reported burns to the gums, thumbs and mouth, and that the nitrogen gas it releases can displace oxygen and pose an asphyxiation risk, with children who have asthma at particular risk.
