Honeycomb toffee

Honeycomb toffee, also known in various regions as honeycomb candy, sponge toffee, cinder toffee, seafoam or hokey pokey, is a sugary confection with a light, rigid, sponge-like texture. It is made mainly from brown sugar and baking soda, sometimes with an added acid such as vinegar, and the reaction between the soda and the acid, or the soda's own breakdown under heat, releases carbon dioxide that becomes trapped in the hot sugar mixture. The bubbles set in place as the sugar cools and hardens, giving the candy its characteristic airy structure.
