Thukpa

Thukpa is a noodle soup dish originating in the eastern part of Tibet, its name a generic Tibetan word for any soup or stew combined with noodles. It has become popular across the Himalayan region, especially in Nepal, Bhutan and the Indian regions of Ladakh, Sikkim and Darjeeling, and is made in several distinct styles including thenthuk with hand pulled noodles, gyathuk with Chinese style noodles, and bhakthuk with hand rolled pinched noodles resembling gnocchi. It is prepared with noodles in a vegetable based broth and can be vegetarian or made with meat, chicken being the most common, and regional versions vary, with the Nepalese version favoring beans and chickpeas with spicier seasoning and the Bhutanese version tending sweeter.
