Mutton is the meat from an older domestic sheep, Ovis aries. Sheep meat is generally divided into three types by age: lamb, from sheep in their first year; hogget, from sheep in their second year; and mutton, from older sheep, with mutton carrying a stronger flavor and tougher texture than lamb, which is the most expensive of the three. The stronger-tasting mutton has become hard to find in many areas as lamb has come to dominate the commercial category, prompting efforts such as the United Kingdom's Mutton Renaissance Campaign to revive it; other languages and regions draw finer distinctions among sheep meats by age, sex and diet, such as the Spanish lechazo, milk-fed unweaned lamb.
