Peremech is an individually sized fried dough pastry common in Volga Tatar and Bashkir cuisines, made from leavened or unleavened dough usually filled with ground meat and chopped onion, though potato or quark fillings are also used. It is shaped into a flattened sphere with a circular opening at the top through which the filling shows, and in Russian is generally known as belyash, a name that spread across Russia and other post Soviet countries.
