Shirred eggs, also called baked eggs, are eggs baked in a flat bottomed dish, traditionally a small dish known as a shirrer, which gives the preparation its name. They are typically cooked simply with butter until the whites set and the yolks thicken, and served in the same dish they were baked in. The basic recipe is easily varied with additions such as cream, breadcrumbs, cheese, herbs or another protein like fish, making it a flexible dish comparable in role to eggs Benedict.
