Stoemp

Stoemp is a Flemish dish found in Belgium, northern France and the Netherlands, made of pureed or mashed potatoes and other root vegetables, sometimes with cream, bacon, onion or shallot, herbs and spices. Variants are often named for their added vegetable, such as wortelstoemp made with carrots, and some versions include egg yolk. It is a simple, rural side dish that has become widely popular across its regions of origin.
