Filipino Cuisine

Southeast Asian Cuisines

Filipino cuisine rests on a Malay and Austronesian base, built around rice, tropical fruit, coconut and seafood, layered over centuries with Chinese trading influence from around the eleventh century, more than three hundred years of Spanish colonial rule, and American influence following the Spanish American War. No single flavor dominates, and family and regional recipes for the same dish vary widely. The cuisine includes the food traditions of more than a hundred ethnolinguistic groups across the archipelago, with the most widely known dishes drawn from Ilocano, Pangasinan, Kapampangan, Tagalog, Bicolano, Visayan, Chavacano and Maranao culinary practices.
