Garlic is a bulb of the genus Allium used as a pungent flavoring and aromatic base across the cuisines of nearly every continent. Archaeological evidence, including charred bulb fragments and storage pits, places its domestication in Central Asia, in the mountainous region spanning parts of modern Kyrgyzstan, Kazakhstan, Uzbekistan and the western Himalayas, with the earliest confirmed direct evidence coming from the site of Djarkutan in modern Uzbekistan, dated to roughly 4000 BCE; broader estimates for when domestication began range across five to seven thousand years before the present.
