A significant portion of the cuisine is vegetarian, largely a consequence of the country's agricultural landscape and its farmers' historical food traditions, and it relies on rice, lentils, fava beans and vegetables in dishes such as ful medames, stewed fava beans, koshary, a mixture of rice, lentils and pasta, and molokhiya, a green soup made from jute leaves, alongside eish baladi, a thick pita bread eaten at nearly every meal. Ancient Egyptian cooking centered for millennia on bread and beer, the Greco Roman period introduced olive oil and wine, and the medieval era brought further influence through trade and migration, including Persian and Moroccan culinary contact, while the twentieth century saw formal cooking education narrow the divide between elite and peasant food. Tea is the national beverage, desserts favor dates, honey and nuts, and the cuisine is generally strongly spiced with cumin, coriander and garlic and centered on communal dining.FactsEgyptian CuisineConnectionsIn the Other AtlasesSourcesTake a Related QuizComments (0)Reader Challenges (0)FactsSignature TechniqueWell-attestedSourced to the subject's own accountLamb and beef are the meats most commonly grilled in Egyptian cuisine, with grilled dishes such as kofta and kebab known collectively as mashwiyat. 1Origin RegionWell-attestedSourced to the subject's own accountEgypt's Nile Valley and Delta, whose fertile land supplies the poultry, legumes, vegetables and fruit central to Egyptian cuisine. 1Egyptian CuisineFilter Results15 entriesDish FamilyAllBread-Based Dishes (1)Desserts and Sweet Puddings (1)European Stews, Braises and Sauced Dishes (1)Middle Eastern and North African Breads and Pastries (2)Middle Eastern and North African Rice and Grain Dishes (3)Middle Eastern and North African Roasted, Grilled and Fried Dishes (2)Middle Eastern and North African Soups (1)Middle Eastern and North African Stews, Braises and Sauced Dishes (3)Stuffed and Filled Vegetable Dishes (1)Main IngredientAllBeef (1)Bell Pepper (1)Butter (1)Cabbage (1)Cheese (1)Chicken (1)Chickpea (1)Coriander (1)Cumin (1)Fava Bean (1)Flour (1)Garlic (1)Jute Leaves (1)Lentil (1)Macaroni (1)Meat (1)Milk (2)Olive Oil (1)Onion (1)Rice (4)Semolina (1)Sesame Oil (1)Spinach (1)Sugar (2)Vegetable Oil (1)Vermicelli (1)Water (1)Yeast (1)Yogurt (1)Za'atar (1)Zucchini (1)Era (Origin Period)All300 (1)900 (2)1200 (1)1300 (1)1853 (2)1900 (1)TraditionAllMezze (1)Passover and Jewish Holiday Foods (2)Ramadan and Eid Feasting Traditions (3)Street Food Culture (2)Tapas Culture (1)Wedding Feast Traditions (1)Format/TypeAllBread-Based Dishes (1)Desserts and Sweet Puddings (1)European Stews, Braises and Sauced Dishes (1)Middle Eastern and North African Breads and Pastries (2)Middle Eastern and North African Rice and Grain Dishes (3)Middle Eastern and North African Roasted, Grilled and Fried Dishes (2)Middle Eastern and North African Soups (1)Middle Eastern and North African Stews, Braises and Sauced Dishes (3)Stuffed and Filled Vegetable Dishes (1)CourseAllDessert (3)Main Course (2)Snack or Street Food (2)Soup (1)Dietary SuitabilityAllContains Dairy or Egg (1)Contains Meat or Poultry (3)Origin RegionAllCyprus (1)Egypt (7)Greece (1)Ottoman Empire (1)The Levant (1)The Maghreb (1)The Middle East (1)Tunisia (1)Turkey (1)Show ResultsBrowseCompareSelect all 15BerkoukesEgyptian CuisineFatayerEgyptian CuisineFattehEgyptian CuisineFul MedamesEgyptian CuisineHawawshiEgyptian CuisineKoshariEgyptian CuisineKosharyEgyptian CuisineMuhallebiEgyptian CuisineMulukhiyahEgyptian CuisineSarmaEgyptian CuisineShakshoukaEgyptian CuisineStuffed PeppersEgyptian CuisineStuffed SquashEgyptian CuisineTulumbaEgyptian CuisineZalabiyehEgyptian CuisineConnectionsExpresses TraditionHalal (Islamic Dietary Law), Food Traditions Well-attested Features DishBerkoukes, Dishes Well-attested Source Berkoukes (dish) (Wikipedia)Fatayer, Dishes Well-attested Source Wikipedia: FatayerFatteh, Dishes Well-attested Source Fatteh - WikipediaFul Medames, Dishes Well-attested Hawawshi, Dishes Well-attested Source Hawawshi (Wikipedia)Koshari, Dishes Well-attested Koshary, Dishes Well-attested Source Koshary (Wikipedia)Muhallebi, Dishes Well-attested Source Muhallebi (Wikipedia)tier 3Mulukhiyah, Dishes Well-attested Source Mulukhiyah - WikipediaSarma, Dishes Well-attested Source Stuffed leaves (Wikipedia)Shakshouka, Dishes Well-attested Source Shakshouka (Wikipedia)Stuffed Peppers, Dishes Well-attested Source Stuffed peppers (Wikipedia)Stuffed Squash, Dishes Well-attested Source Stuffed squash (Wikipedia)Tulumba, Dishes Well-attested Source Tulumba (Wikipedia)Zalabiyeh, Dishes Well-attested Source Zalabiyeh (Wikipedia)Uses IngredientCheese, Ingredients Well-attested Source Egyptian Cuisine (Wikipedia)tier 3In the Other AtlasesOriginated InNile ValleyAlso in Geography Atlas: where this subject originated.Source Egyptian Cuisine (Wikipedia)tier 3Sources1.
