Molluscs

Finfish and Shellfish Products

Molluscs, also spelled mollusks, are the members of Mollusca, a phylum of protostomic invertebrate animals in which 86,600 extant species are recognized, the second-largest animal phylum after Arthropoda. The cited article says molluscs comprise about 23 percent of all the named marine organisms and include cephalopods such as squid, cuttlefish and octopuses as well as gastropods such as snails, slugs and abalone. It states that molluscs have been and still are an important food source for humans, and that toxins which can accumulate in certain molluscs under specific conditions create a risk of food poisoning, so many jurisdictions have regulations to reduce this risk. Ingredients the atlas records under the molluscs allergen value are grouped under this entry.
