Home›Dishes›Main Ingredient›RiceIngredientRiceCereal Grains, Pseudocereals and PastaReference and ClassificationVerifiedThe staple grain of most of East, South and Southeast Asian cuisine, cultivated in flooded paddies for the japonica and indica subspecies of Oryza sativa. It is the caloric base beneath dishes across Chinese, Indian and Japanese cuisine alike, eaten plain, steamed, fermented into wine or vinegar, or ground into flour and noodles. Asian rice was domesticated in China some 13,500 to 8,200 years ago, and African rice was domesticated independently in West Africa about 3,000 years ago. Rice contains no gluten; long-grain Indica rice tends to stay intact on cooking and is dry and fluffy, while short-grain Japonica rice is sticky and keeps its shape when cooked, which is why it is used for sushi.FactsRiceConnectionsIn the Other AtlasesSourcesComments (0)Reader Challenges (0)FactsDisputedEarliest Documented Use, From (Year)Scholarly debate9000 BCE to 6000 BCE 1Archaeobotanical
