Tomato

Vegetables and Vegetable Products

A fruit eaten as a vegetable whose wild ancestor is native to western South America, domesticated there or in Central America, and carried globally after the Columbian Exchange to become foundational in cuisines from Italy to West Africa to Peru. The likely wild ancestor, Solanum pimpinellifolium, is native to Chile, Peru and Ecuador, and the exact date of domestication is unknown. The tomato has a strong savory umami flavor and is used in sauces for pasta and pizza, in soups such as gazpacho, in salsa and ketchup, and in various curries.
