Home›Dishes›Main Ingredient›PotatoIngredientPotatoVegetables and Vegetable ProductsReference and ClassificationVerifiedA starchy tuber domesticated in the Andean highlands of present-day Peru and Bolivia, carried to Europe after the sixteenth-century Columbian Exchange and, from there, to the rest of the world; still a foundation of Peruvian and Andean cuisine, with thousands of native varieties grown in the Andes today. Genetic studies show that the cultivated potato has a single origin, in the area of present-day southern Peru and extreme northwestern Bolivia, and the Spanish introduced it to Europe in the second half of the 16th century. There are now over 5,000 varieties, and because the aerial parts of the plant contain the toxin solanine, sprouts and skins exposed to light can make tubers toxic.FactsPotatoConnectionsIn the Other
