Coconut milk is a white, opaque liquid extracted by grating the flesh of a mature coconut, mixing it with hot water, and pressing the mixture to release its fat and flavor. It is a staple ingredient across Southeast Asian, South Asian, Caribbean and West African cooking, used as the liquid base for curries, soups, rice dishes and desserts. Its fat content is lower than coconut cream, which is produced from a similar process using less added water, and coconut milk is typically sold either fresh, canned, or as a shelf stable carton product, with the thin liquid and thicker cream sometimes separating on standing.
